BUDDHA'S HAND GINGER JAM

Buddha’s Hand fruit is in the citron family. It’s shaped like hands in prayer/meditation.

Let’s do it:

  • 2 pounds Buddha’s hand, rinsed

  • 1 hand of ginger (about the size of your hand), peeled

  • 5 cups turbinado sugar

  • 1 teaspoon Celtic or Himalayan salt

  • 4 lemons or limes

Using a sharp knife, thinly shave the Buddha’s hand and ginger, from the tips down to the palm. Transfer the slices to a large saucepan and cover with 6 cups water.

Bring the water to a boil, then reduce to low simmer cover and simmer for 25 minutes.

Add in sugar and salt. and the zest two of the lemons and the lemon juice.

Cook, stirring every 4 minutes for 20 minutes.

Remove the pot from the heat and allow to come to room temperature. Then transfer the marmalade to glass jars and seal. Refrigerate. Enjoy!
